The defining note of Madeira comes from the unique process of estufagem, a long gentle heating and cooling process that mimics a journey across the Tropics on a sailing ship (something most exported Madeiras would have undergone in the days when Madeira was an importing re-supply stop for ships bound for the Orient). This leaves a pleasant cooked character in the wine.
