Whisky and Malt Whisky
The Malt Whisky industry started life illegally and furtively in the remote Glens of Highland Scotland, where the Excise men had a harder job finding the stills. Gradually licenced over the years, and finding that whiskies stored in oak casks for a number of years were much nicer than the raw young spirit, Malt Whisky has emerged as a world beater. Styles vary according to region, tradition, the shape of the still, length and manner of wood ageing amongst other factors. It's fascinating and utterly tasty.
