Exotic between its deep color and perfumed nose, this is generous—even full in body— with a juicy, plump core. Chalk, white flowers, warm hay and plums fill the palate. The crunchy, seashell-scented finish cleans up the palate. This is a blend of domaine and purchased fruit. Tasted twice, in September and November. The 2023 Chablis Les Clos Grand Cru underwent partial fermentation in grès (sandstone) eggs that have more porosity, plus 500-liter barrels. This has an attractive nose with hints of yellow flowers, white peach and tangerine, much more expressive than the previous vintage. Taut and crisp, the palate is well balanced with fine definition and a touch of white pepper. There is good weight on the finish. This is a Les Clos that is worth hunting down. Cask sample. Glorious right from the get-go – as if it cannot wait to fly out the starting blocks and, arrow-like, run the race to win. Deep Seville-orange and green-mandarin notes. Glittering intensity and somehow compact, yet with a thousand tiny spaces of light in every molecule. Etchy edgy saltiness, as if the minerality were made of crushed salt rocks. Three plots with old vines, made in 500 litre barrels and an earthenware egg. Lemon and lime. A more classic Chablis nose, with slightly more energy and less soft, the fruit with a little fresh apricot increasing at the back of the palate, a light toastiness, just needing a little more of the white limestone feel to be a quintessential Clos. Domaine Drouhin Vaudon

The Beaune-based merchant Joseph Drouhin has restyled its Chablis Domaine 'Domaine Drouhin-Vaudon' to emphasise its ties with and holdings in (38 hectares) the Chablis vineyard. The Moulin de Vaudon, an 18th Century watermill straddling the Serein River, close to the Grand Cru vineyards of Chablis, is the headquarters and the source of the name. It is the largest estate in Chablis entirely farmed biodynamically.
