There is a comforting curve to this wine that is almost, but not quite, plump. It's liquorice, marshmallow and roses, which sounds as if the wine is sweet when it's not – it's bone dry. It's flush with fruity but not fruity. Cherry blossom. Ultra-fine bubbles. Something very honest about this. It tastes as if the wine made from the terroir hasn't been in any way obscured by the champagne winemaking.

A blend of 50% Chardonnay (based on the 2021 vintage, from vines planted in the commune of Mareuil-sur-Aÿ) and 44% Pinot Noir (from the same village and comprising a blend of the 2019 and 2020 vintages), the NV Extra-Brut Premier Cru Rosé displays aromas of rose, peony, strawberries and citrus. Moderately weighted and bright, it has a tense, delicate mid-palate, a pinpoint mousse and a long, precise and delicate finish. Jean-Paul Hébrart produces red wine from two parcels of pinot noir in Mareuil-sur-Aÿ, matured for two years in barriques. 'I want to produce a very fresh style of rosé, which is why I use so much chardonnay in the blend and such a small volume of red wine,' he explains. 'Mareuil-sur-Aÿ pinot noir provides elegance, while maturation in barriques furnishes tannin and colour. 2019 was a very niche vintage, more complex and higher in quality than 2018 as the harvest was not so high in quantity but with perfect maturity and full ripeness like 2022.' Rosé now represents 20% of his production and in the 2022 base he bottled a record 30,000 bottles out of a total of 170,000.

Mareuil pinot noir is perfectly adapted for elegant rosé (as evidenced not least by neighbours Billecart-Salmon and Philipponnat), and rises to magnificent effect in the attentive and masterful style of Jean-Paul Hébrart. This is a pretty rosé of eloquent, pale salmon hue and beautiful freshness of strawberries, morello cherries and raspberries, with a rose petal lift and pink grapefruit tang. Fine chalk minerality and gracefully lifted yet perfectly ripe acidity glide through a long finish. Fantastic.

No wonder the Rosé Brut is such an integral product (a good fifth of the production) for Marc Hebrart: the style is stylistically perfected and utterly charming. Unconventionally, Jean-Paul Hebrart ages the red-wine component (6% of the total) in oak for a whole year. Here, the base year is 2021, which gets complemented by 2020 and 2019 reserve wines and a splash of red wine. The wine is delicate in both its colour and aromatics, because Jean-Paul wants the red wine perfectly integrated. Beautiful redcurrant and strawberry fruit, with pencil shavings and peach adding to the delicious whole. Appetising, vinous and fruity wine. Champagne Marc Hébrart

Marc Hébrart started making his own Champagne in 1962, and the domaine is now run by Jean-Paul, who took over in 1997. Jean-Paul tries to add to the family holdings every year, believing that even at current prices it's still a good long-term bet. He's currently running 16 hectares, 8 ha of Pinot in Mareuil-sur-Aÿ, Chardonnay in Oiry, Avize, Chouilly and Cramant, and more Pinot in Louvois and Aÿ - as well as the Clos le Léon in Dizy: in total 80 parcels in 11 villages.

The vineyards are farmed sustainably, with as little input as possible. Vinification is by parcel to give the widest possible palette when it comes to blending, and or course allowing for single-vineyard releases like the Clos Léon, a rare walled Clos in the village of Dizy. Most of the Champagnes are made in stainless steel, but since 2004 there has been a barrel-fermented cuvée which blends some of his Chardonnays on the Côte de Blancs with some of his best Pinot Noirs to the north of the Marne - 'Rive Droite-Rive Gauche'.
