(from a 1 ha parcel planted in 1970 though as noted in the introduction, the surface area will decrease to .70 ha effective with the 2021 vintage). An elegant, pure and airy nose is comprised by notes of zest, ocean breeze, quinine and white flowers. There is terrific underlying tension to the bigger-bodied yet even more refined flavors that brim with sappy dry extract on the highly complex and persistent bone-dry yet not really especially austere finale. This wine sends chills up my spine. Its whirlwind of aromas is immediately captivating. Lime blossom, aged cheese, candle wax and oyster shell start off the array. The acidity is slightly pungent now, but that will ease up in time. And who is opening this before at least 15 years? The finish lingers with chalky flavors – paradoxically, even though the parcel isn't particularly calcareous – and a delightfully dry texture. WINE OF THE VINTAGE & TOP QUALITY PRODUCER Understated in comparison to its much more dynamic, weighty Les Clos, Dauvissat's Preuses is a very fine white wine and a great grand cru Chablis in this vintage. So much finesse here, almost delicate on the palate. Crystalline citrus fruit, a seemingly never-ending mineral edge to finish. Although all of the wine is aged in barrels, there is no trace of oak flavour, just the additional complexity that the wood seems to bring to the texture of the wine. Outstanding. The 2021 Chablis Les Preuses Grand Cru needs a little more cohesion on the nose, and I was expecting a little more power to come through. I suspect that I just caught this on an off day. The palate is better with fine cohesion and acidity, decent depth with orange zest and spice. Very harmonious and persistent on the finish - I suspect this will open up beautifully once in bottle, but for me, it is shaded by the Les Clos at the premature juncture. Domaine Vincent Dauvissat
A domaine of 12.7 hectares, comprising a hectare each of the Grands Crus Clos and Preuses, 3.7ha of Premier Cru Forest, 1.3ha of Vaillons, 0.4ha of Séchet, .3ha of Montée de Tonnerre, 3.3ha of Chablis, 1.1ha of Petit Chablis, and .6ha of Irancy (red).
Vincent Dauvissat remains one of the (if not the) leading lights of Chablis, and his wines are always in high demand and limited volume.
Vincent's grandfather Robert was the first to start bottling under the family name in 1931 and Vincent uses the same cellar today - but the family have been growing grapes here since the 18th century. Today his single-minded determination in the vineyard, where he follows biodynamic principles (without certification) followed by very subtle use of old oak barrels as part of a long élevage, produce some of Chablis' most age-worthy and fascinating wines.
Vincent advises drinking the Grands Crus either young, (within the first three years) or after 10 years when they are becoming fully evolved. Serve at 13C, so that the wine will warm up to about 15C before tasting - any colder masks the subtleties. He prefers to serve the wine directly in glasses rather than decanting it, so as not to miss the first nose and its evolution - with an old wine he advises simply smelling this evolution over the first half an hour before tasting.
