It was impossible for Guillaume to get the main stems in 2021 to full maturity, so he removed them, leaving just the smaller 'connecting' grape stalks in the barrels for fermentation. It is hard not to admire this willingness to adapt and work with the vintage. Guillaume has transformed the reds here over the last 10 years - and this is another success, in a complicated year.
For now this is quite hard to read, particularly on the nose where things are quite tight with gun-smoke and savour to the fore, dominating the gentle pops of perfume and some delicate floral character. The palate is more open, with nicely deep and well-textured fruit. A feel of ripeness to the plum and juicy cherry-fleshed notes. Well spiced too - and then a fresh lift to the finish. It will be great to see this promising baby once the élevage is complete and the wine has settled in bottle. Full of Grand Cru promise - with a distinct mark of this complicated year.

Only partly destemmed, removing the main core but leaving the pedicels. This changes the nose completely. Hard to define but one keeps going back for more. Some citrus shows alongside very varied cherry notes. Brings in some darker floral notes too. The pedicel treatment changes the shape of the wine too, less precise but softer and rounder. Delicacy instead of precision. Really interesting but in the end not Boillot style. A bit more lactic at the end, after a later malolactic fermentation than the other wines. A collector’s item as Guillaume is unlikely to repeat this experiment. Drinking range: 2028 - 2035 Rating: 93-97 Jasper Morris - Inside Burgundy  (Oct 2022)

Domaine Henri Boillot

A domaine which dates to 1885, but which began properly in the early years of the 20th century under the current Henri's grandfather (also Henri). His son, Jean, was the one who really developed it. Henri arrived in 1975 and worked his way up, becoming the winemaker. In 2000 he began the building of the new winery at the bottom of Meursault, and he then bought out his brother and sister to keep the domaine as one, renaming it from 'Domaine Jean Boillot' to 'Domaine Henri Boillot' to avoid confusion with his brother Jean-Marc's domaine.

The Domaine totals around 14 hectares, with roughly equal surfaces of red and white, and of which just under 4ha is the Monopole vineyard of Clos de la Mouchère, a walled enclave within the premier Cru Puligny Perrières. The 2017 vintage saw the arrival of two new parcels of Grand Cru red, in Échezeaux and Latricières Chambertin
