Clément ploughs this twice a year by horse - he says he could use the tractor, but he can't stand the noise of the ploughshares on the rock which is so hard it's a ringing ding rather than a soft tok that he gets in Les Saint Georges. He does one soft pigeage, describing it as like walking on eggs to avoid over-extraction. The ground is so mineral and produces a wine to match, drawn out long and fine by the minerals - a real sense of being rock-juice. Obviously firm to the point of being uncomfortable now, but in time this terroir is the boss. 'The vines are over 80 years old but I'm not going to pull them up'. More a dense purple without the black. The Vaucrains offers a very fine bouquet, all in elegance of ripe fruit with some slightly floral notes. Bramble and raspberry jelly on the palate, fills the mouth, covering the bone structure. Drinking range: 2028 - 2035 Rating: **** 93-95 Jasper Morris - Inside Burgundy  (Nov 2022)

Domaine Chicotot

A 7 hectare domaine in Nuits Saint Georges currently run by Pascale and Clément Chicotot, who describe themselves as 'vignerons...simplement'. They say that only natural methods have been used for several generations and the domaine is certified organic.

The various vineyards consist of nearly two and a half hectares of Bourgogne Côte d’Or Pinot Noir, and two plots in the Côte de Beaune:

Vinification is traditional, the fermentation beginning after 5 to 6 days of cold maceration and lasting around 15 days, with remontage or pigeage as necessary and aged in barrel with a maximum of 25% new wood. SO2 levels are very low. The wines are well-coloured and well-defined and expressive - lots of personality here, with the village wines (which are all on the Vosne side of Nuits) near 1er Cru quality.

The picture shows Clément and Pascale with the graphic design they've used as the label for the old-vine cuvée 'Papillon de Nuys'.
